Chicken Fiesta Salad

Ingredients

  • 2 large chicken breasts
  • 1 packet dry fajita or ranch seasoning
  • 1 tbsp vegetable oil
  • 15 oz. can black beans, rinsed and drained
  • 11 oz. can Mexican-style corn, drained
  • 1/2 cup salsa
  • 5 oz. package mixed salad greens
  • 1 cup chopped onion
  • 1 tomato, cut into wedges
  • 1 lime, cut into wedges

Directions

  1. Rub chicken evenly with half of fajita seasoning. Heat oil in a skillet over medium heat. Cook chicken about 10 minutes per side, or until cooked through. Let rest 5 minutes before slicing.

  2. Meanwhile, stir together beans, corn, salsa, and remaining fajita seasoning in a large saucepan. Heat over medium heat until warm.

  3. Toss together greens, onion and tomato in a large bowl. Top salad with chicken and beans mixture. Garnish with lime wedges.
