Ingredients
- 2 large chicken breasts
- 1 packet dry fajita or ranch seasoning
- 1 tbsp vegetable oil
- 15 oz. can black beans, rinsed and drained
- 11 oz. can Mexican-style corn, drained
- 1/2 cup salsa
- 5 oz. package mixed salad greens
- 1 cup chopped onion
- 1 tomato, cut into wedges
- 1 lime, cut into wedges

Rub chicken evenly with half of fajita seasoning. Heat oil in a skillet over medium heat. Cook chicken about 10 minutes per side, or until cooked through. Let rest 5 minutes before slicing.

Meanwhile, stir together beans, corn, salsa, and remaining fajita seasoning in a large saucepan. Heat over medium heat until warm.

Toss together greens, onion and tomato in a large bowl. Top salad with chicken and beans mixture. Garnish with lime wedges.
