Ingredients
- 2-3 onions, coarsely chopped
- fresh ginger, grated
- garlic, minced
- 6c chicken stock
- 2c beef stock
- mushrooms
- scallions
Directions

simmer onions, ginger and garlic in stock (don’t boil)

strain into another bowl over sliced mushrooms

serve in individual bowls with scallions
