Brussels Sprouts Salad with Parmesan and Marcona Almonds

Ingredients

  • 1/4 cup white-wine vinegar
  • 1 tbsp honey
  • 2 tsp minced shallot
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup olive oil
  • 1 1/2 lbs. Brussels sprouts, shredded
  • 1/4 cup Marcona almonds, chopped
  • 2 oz. Parmesan, shaved

Directions

  1. Whisk vinegar, honey, shallot, salt and pepper in a large bowl. Gradually whisk in oil. Add Brussels sprouts and toss to coat. Sprinkle with almonds and Parmesan.
