Garlic and Herb Polenta

Ingredients

  • 1 tbsp olive oil
  • 1/2 cup finely chopped onion
  • 2 tsp Roasted Garlic Puree (see recipe)
  • 1 1/4 cups water
  • 1 1/4 cups milk
  • 1/3 cup heavy cream
  • 1/2 cup yellow cornmeal
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 2 tbsp grated Asiago or Parmesan
  • 1/4 cup crumbled soft, mild goat cheese
  • 1 tbsp minced fresh thyme leaves
  • 1 tbsp minced fresh sage leaves
  • 1 tbsp chopped flat-leaf parsley, for garnish

Directions

  1. Heat the olive oil in a 3-qt. saucepan over medium heat until hot but not smoking. Add the onions and cook, stirring, for 3 minutes, or until softened. Stir in Roasted Garlic Puree. Add the water, milk and heavy cream and bring the mixture to a simmer over high heat.

  2. Add the cornmeal in a slow steady stream, whisking constantly. Stir in the salt and pepper. Cook, stirring constantly, for 15 to 20 minutes or until thick and bubbling. Remove the saucepan from the heat and stir in the Asiago, goat cheese, thyme and sage.

  3. Serve the polenta hot, garnish with the parsley.
