Lemon Blueberry Fluff Parfait or Pie

Ingredients

  • 1 small box Lemon Jello, sugar free
  • 1/2 graham crackers for parfait or 1 graham pie crust
  • 1 Lemon
  • 1-2 cups fresh or frozen blueberries
  • Sugar free Cool whip

Directions

  1. Dissolve jello in 1 cup boiling water, add 1 cup ice and stir until ice is melted (remove any existing pieces of ice). Place in fridge to slightly jell.

  2. Slice lemons for garnish and “Candy” the lemon slices.

  3. Combine with hand mixer the cool whip and jello. you can add some lemon zest if desired.

  4. Layer in a cup or parfait dishes (or make a pie). Layer crumbled grahams, lemon jello/cool whip, 1/4 cup blueberries and another layer of lemon/cool whip.

  5. Garnish with crumbled graham crackers, a few blueberries and 1/2 of a candied lemon slice or even a sprig of lemon mint.
