Ingredients
- 2- 15 oz. cans pumpkin
- 15.5 oz. can golden hominy, drained
- 3 tbsp olive oil, divided
- 1 1/2 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp ground cumin
- 1/4 tsp garlic powder
- 1/4 tsp ground red pepper
- 2 tsp fresh lime juice
- 3 tbsp roasted salted pumpkin seeds
- Pita bread, breadsticks and vegetables, to serve

In the work bowl of a food processor, process together pumpkin and hominy until smooth, about 1 minute.

In a medium skillet, heat 2 tbsp oil over medium heat. Add pumpkin mixture, paprika, salt, cumin, garlic powder and red pepper. Cook, stirring occasionally, until heated through, about 5 minutes. Stir in lime juice. Spoon into a serving bowl. Drizzle with remaining 1 tbsp oil; sprinkle with pumpkin seeds. Serve with bread and vegetables.
