Green Chile Cheese Grits

Ingredients

  • 2 cups whole milk
  • 2 cups chicken stock
  • 1 cup stone-ground grits
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 cup shredded Cheddar
  • 4 oz. can chopped green chiles
  • 2 tbsp cream cheese
  • 1 tbsp unsalted butter

Directions

  1. In a large saucepan, bring milk and stock to a boil over medium-high heat. Slowly whisk in grits, salt and pepper. Reduce heat, cover and simmer, stirring frequently, until grits are tender and creamy, about 30 minutes.

  2. Remove grits from heat; stir in Cheddar, chiles, cream cheese, and butter until well combined.
