Egg plant casserole

Ingredients

  • 1 large eggplant- cubed
  • 1/2 C butte1 large chopped onion
  • 2 t beau monde
  • 2 eggs
  • 2-3 stalks chopped celery
  • 3 T bread crumbs

Directions

  1. Soak eggplant with salt 20 minutes-Rinse

  2. Boil eggplant

  3. Saute onion, celery in butter

  4. CASSEROLE DISH BUTTERED

  5. Mix to chopped or mashed eggplant beau monde, saute vegetables, egg

  6. Top with bread crumbs

  7. Bake 350 degrees for 45 min-1 hour
