Ingredients
- 1 large head cauliflower, broken into florets
- 1 cup shredded Parmesan, divided
- 1/3 cup heavy whipping cream or half-and-half
- 1 tbsp butter
- 1/2 tsp black pepper
- Minced fresh parsley
Directions

Place 1 inch water and the cauliflower in a large saucepan; bring to a boil over high heat. Cook, covered, until very soft, 10 to 12 minutes. Drain. Mash cauliflower to desired consistency. Stir in 1/2 cup cheese, cream, butter and pepper. Sprinkle with remaining 1/2 cup cheese and parsley.
