Ingredients
- 2 tbsp butter
- 1/4 cup diced onion
- 1/4 cup diced green pepper
- 1/8 cup water
- 4 eggs
- 1/4 tsp salt
- 1/4 cup diced tomatoes
- 1/4 cup cooked and diced bacon
- 1/4 cup cooked and diced ham
- 1/4 cup cooked and sliced sausage links
- 1/4 cup diced deli roast beef
- 3/4 cup shredded Cheddar cheese
Directions

In a skillet on medium heat, melt butter. Add onions and green peppers to the skillet.

In a mixing bowl, add water, eggs, and salt. Stir and beat well.

Pour egg mixture into the skillet and cook for 1 to 2 minutes to let the egg set. Add tomatoes and all the meats plus 1/2 cup of the cheese.

Fold the omelette in half and top with the remaining cheese.

Serve with salsa and sliced green onions.
