Chili’s Southwestern Eggrolls

Ingredients

  • 16 oz. can rinsed and drained black beans
  • 16 oz. can drained corn
  • 2 cups washed and drained fresh spinach
  • 2 chopped jalapenos
  • 2 pressed garlic cloves
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup minced onion
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups grated Mexican cheese blend
  • 15 small whole-wheat tortillas
  • Cooking oil
  • Prepared salsa
  • Sour cream

Directions

  1. In a large mixing bowl, combine beans, corn, spinach, jalapenos, garlic, cilantro, onion, chili powder, salt, pepper and cheese and mix well.

  2. Put 2 tbsp of mixture on each tortilla and roll into a thin eggroll.

  3. Heat a frying pan to medium-high heat.

  4. Using 1 tbsp of cooking oil per 2 to 3 eggrolls, shallow fry in saute pan.

  5. Garnish with salsa and sour cream.
