Panera Bread’s Tomato Mozzarella Salad

Ingredients

  • 1 loaf focaccia
  • 5 or 6 chopped ripe tomatoes
  • 2 tbsp fresh chopped basil
  • 1 red onion, thinly sliced
  • 4 oz. cubed fresh mozzarella
  • Balsamic vinaigrette dressing

Directions

  1. Cut bread into 4 wedges and place on plate.

  2. In a small bowl, gently toss tomatoes, basil, and red onion together.

  3. Place 1/4 of the mixture on each wedge of bread and top with 1/4 of cheese cubes.

  4. Pour about 2 oz. of dressing over each serving.
