Ingredients
- 1 chicken breast
- Salt and pepper, to taste
- 2 tsp barbecue sauce
- 2 slices of well cooked bacon
- 1/4 cup mixture Monterey Jack and sharp Cheddar
- 2 slices diced tomatoes
- 1 tsp chopped chives
Directions

Pound the chicken breast until it is flattened. Season with salt and pepper.

Heat a skillet to medium-high heat and spray with nonstick cooking oil.

Cook the chicken for 4 to 5 minutes per side, or until done. Transfer the chicken to a microwave-safe serving plate.

Top the chicken with barbecue sauce, bacon and cheeses.

Microwave for 1 to 2 minutes, until the cheese melts.

Sprinkle with tomatoes and chives.
