Ingredients
- 1 tsp olive oil
- 2/3 cup white rice
- 1 lime
- 1 cup water
- 1/2 tsp salt
- 2 tsp fresh cilantro
Directions

In a 2-quart heavy saucepan, heat oil over low heat.

Add rice and the juice from half of lime. Stir for 1 minute.

Add water and salt. Bring to a full boil.

Cover and turn down to a simmer over low heat.

Cook until the rice is tender and the water is absorbed about 25 minutes.

Add the cilantro and the juice from the other half of the lime.

Fluff rice with a fork.
