Ingredients
- 3 1/2 cups 1/4-inch thick sliced assorted bell peppers
- 3 cups 1/4-inch sliced red onion
- 6 tbsp vegetable oil, divided
- 5 tsp fajita seasoning, divided
- 1 lb. flank steak, sliced 1/4 inch thick against the grain
- 1 garlic clove, grated
- 1 jalapeno, thinly sliced
- 1/4 cup chopped fresh cilantro
- Flour tortillas, sour cream and lime wedges

Position oven rack in top third of oven. Preheat oven to broil. Place a 17 1/2×12 1/2 inch rimmed baking sheet in oven to preheat.

In a large bowl, toss together bell peppers, onion, 2 tbsp oil, and 2 tsp fajita seasoning. Carefully spread bell pepper mixture in an even layer on hot pan.

Broil until veggies are crisp-tender, 8 to 10 minutes. Leave oven on.

In same bowl, toss together steak, garlic, remaining 4 tbsp oil and remaining 3 tsp fajita seasoning. Move bell pepper mixture to one half of pan; add steak to empty half of pan. Sprinkle jalapeno onto bell pepper mixture.

Broil until steak is browned and cooked through, 4 to 6 minutes, or to desired doneness. Pour off excess juices. Sprinkle cilantro onto steak and vegetables. Serve with tortillas, sour cream and lime.
