Ingredients
- Basic Pie Dough (see recipe)
- Filling:
- 5 medium Granny Smith apples, peeled, cored and thinly sliced
- 2 Pink Lady apples, peeled, cored and thinly sliced
- 1 1/4 cups granulated sugar, divided
- 1/4 cup cornstarch
- 2 tsp ground cinnamon
- Topping:
- 1 1/2 cups all-purpose flour
- 1/2 cup light brown sugar
- 1/2 cup chopped walnuts
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- Caramel sauce and vanilla ice cream, to serve

Preheat oven to 350.

On a lightly floured surface, roll Basic Pie Dough into a 12-inch circle. Transfer to a 9-inch deep-dish pie plate, pressing into bottom and up sides. Trim excess dough to 1/2 inch beyond edges of pie plate. Fold edges under, and crimp as desired. Top with a piece of parchment paper, letting ends extent over edges of plate. Add pie weights.

Bake for 15 minutes. Carefully remove paper and weights. Leave oven on.

Meanwhile, for filling: In a large bowl, stir together all apples and 1 cup sugar. Let stand for 1 hour. Drain apples, discarding liquid. Return apples to bowl.

In a small bowl, whisk together cornstarch, cinnamon and remaining 1/4 cup sugar; stir into apples. Spoon apple mixture into prepared crust.

For topping: In a medium bowl, whisk together flour, brown sugar, walnuts, granulated sugar, cinnamon and salt; stir in melted butter until mixture is crumbly. Sprinkle mixture onto apples.

Bake until topping is golden brown, 45-55 minutes. Let cool completely on a wire rack. Serve with caramel sauce and ice cream.
