Ingredients
- 3 to 4 large sweet yellow onions, sliced thinly
- 1/2 tsp pepper
- 1 bay leaf
- 2 sprigs fresh thyme
- 7 cups beef stock
- 1 cup dry white wine
- Loaf of French bread, sliced
- 4 oz. Gruyere, sliced thinly
Directions

Place all of the onions into the slow cooker and sprinkle them with the pepper. Add the bay leaf and sprigs of thyme.

Pour in the beef stock and wine.

Cover and cook on LOW for 7 to 8 hours. Remove the thyme sprigs and bay leaf.

Serve each bowl of soup in an oven-safe bowl and place a slice of bread on top, topped with enough cheese to cover the entire top. Place it in the oven under the broiler for a few minutes, or until the cheese starts to bubble.
