Chuck Roast

Ingredients

  • 1/4 cup flour
  • Salt and pepper, to taste
  • 3 to 4 lbs. boneless chuck roast
  • 3 tbsp canola oil
  • 4 tbsp butter
  • 10 pepperoncini, fresh or jarred
  • 2 tbsp mayo
  • 2 tsp apple cider vinegar
  • 1/4 tsp dried dill
  • 1/8 tsp paprika

Directions

  1. Mix flour, salt and pepper and rub into roast. Brown in canola oil. Place roast in slow cooker.

  2. Top with butter and pepperoncini.

  3. In a small bowl, mix mayo, vinegar, dill and paprika. Spread over meat.

  4. Cover and cook on LOW for 8 hours. Remove from cooker, shred with forks and return to cooker. Stir to mix juices and serve.
