Categories: Slow Cooker
Ingredients
- 4 lbs. potatoes, peeled and cubed
- 6 cups water, or enough to cover the potatoes
- 2 chicken bouillon cubes
- 4 tbsp butter
- 1/4 to 1/2 cup milk
- 1 1/2 to 2 tsp salt
- 1/8 tsp pepper
- 8 oz. chive and onion cream cheese
Directions
-
Place the potatoes in your slow cooker and cover with water completely. Add the bouillon cubes.
-
Cover and cook on HIGH for 3 to 4 hours, or until they are tender with a fork.
-
Drain the potatoes and wash out the inside of your slow cooker with HOT water to prevent the slow cooker from cracking.
-
Return the potatoes to the slow cooker. Add the butter, milk, salt and pepper.
-
At this point you can use a potato masher or immersion blender to make your mashed potatoes as smooth or chunky as you would like them.
-
Next, add the cream cheese (and a bit more milk if needed to reach desired consistency) and mix until well-blended.
