Ingredients
- 3 packages of cream cheese (8 oz each), softened
- 1 cup powdered erythritol or other sweetener
- 1 tablespoon vanilla extract
- 1 c heavy cream
- 1 tablespoon unflavored gelatin
- 1/3 c boiling water
Directions

In mixer with whisk beater, beat cream cheese, sweetener, and vanilla.

Slowly add cream.

Beat on high speed until fluffy (3-5 min)

In separate bowl, mix boiling water and gelatin – stir until gelatin is fully dissolved, but be sure not to let the gelatin start to set

Add to cream cheese mixture and beat another 2-3 minutes (it may loose a lot of the fluff and look running, that is ok)

Put in container and leave undisturbed in the fridge until it is set (30-60 minutes minimum)

Serve alone or with topping

This works best if you can pour the unset mixture into individual jars or cups in approximately the size portion you want to serve it as
