Ingredients
- 3 tbsp butter, plus more for brushing
- 2 tbsp flour
- 1 cup milk
- 1 cup aged cheddar, shredded
- Salt, to taste
- Pinch cayenne pepper
- 6 cremini mushrooms, sliced
- 14 oz. ground beef
- 1 tsp steak spice
- Salt and pepper, to taste
- 2 brioche buns
- 4 cheddar cheese slices
- 6 strips applewood smoked bacon, cooked crisp

Preheat grill to 425.

To prepare cheese sauce, add 2 tbsp butter to a small pot. Add flour and cook for about 1 minute, stirring frequently. While stirring, gradually pour in milk. Let simmer until thick. Stir in cheese, salt and cayenne until cheese has melted. Set aside and keep warm.

In a pan, heat 1 tbsp butter until melted then add mushrooms. Stir fry over medium heat. Sprinkle salt and pepper on top to season. Set aside.

Make squared beef patties by combining ground beef, steak spice, salt and pepper in a bowl. Divide into two equal meatballs, then flatten to desired size to form patties.

Add burger patties onto grill and cook for about 4 to 6 minutes on each side. Remove from grill.

Brush butter onto the inner sides of buns and add to the grill, buttered side facing down. Heat until toasted.

Assemble burgers by taking bottom bun and topping with 1st cheese slice, patty, 2nd cheese slice, bacon, prepared cheese sauce, and sauteed mushrooms. Top everything with top bun.
