Ingredients
- 4 quarts water
- 1 tbsp salt
- 1 lb. macaroni pasta
- 1 tsp olive oil
- 1 large tomato, finely chopped
- 4 oz. mushrooms, finely chopped
- 1/4 cup chicken broth
- 1/4 cup dry white wine
- 1/4 cup heavy cream
- 1 cup pesto
- 1 cup Parmesan, grated
Directions

Add water and salt to a pot. Bring to a boil. Put in pasta and cook for 10 minutes or until al dente. Drain and set aside.

In a pan, heat oil. Saute tomatoes and mushrooms for 5 minutes. Pour in broth, wine and cream. Bring to a boil. Reduce heat to medium and simmer for 2 minutes or until mixture is thick. Stir in pesto and cook for another 2 minutes. Toss in pasta. Mix until fully coated.

Transfer onto plates and sprinkle with Parmesan.
