Noodles and Company’s Pesto Cavatappi

Ingredients

  • 4 quarts water
  • 1 tbsp salt
  • 1 lb. macaroni pasta
  • 1 tsp olive oil
  • 1 large tomato, finely chopped
  • 4 oz. mushrooms, finely chopped
  • 1/4 cup chicken broth
  • 1/4 cup dry white wine
  • 1/4 cup heavy cream
  • 1 cup pesto
  • 1 cup Parmesan, grated

Directions

  1. Add water and salt to a pot. Bring to a boil. Put in pasta and cook for 10 minutes or until al dente. Drain and set aside.

  2. In a pan, heat oil. Saute tomatoes and mushrooms for 5 minutes. Pour in broth, wine and cream. Bring to a boil. Reduce heat to medium and simmer for 2 minutes or until mixture is thick. Stir in pesto and cook for another 2 minutes. Toss in pasta. Mix until fully coated.

  3. Transfer onto plates and sprinkle with Parmesan.
