Dijon Mustard Vinaigrette

Ingredients

  • 1 extra-large egg yolk
  • 1 tbsp Dijon
  • 1 1/2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 3/4 cup olive oil
  • Kosher salt and black pepper

Directions

  1. Whisk the egg yolk in a small bowl with the Dijon, vinegar, lemon juice, 1/2 tsp salt and black pepper. Slowly whisk in the olive oil. Thin the vinaigrette with 1 tsp water or more, if needed. Taste for balance and seasoning.
