Ingredients
- 3 1/2 lb. pork spare ribs, cut into single ribs and halved
- 1 tsp five-spice powder
- Salt and pepper
- 5 scallions, finely sliced lengthwise, to garnish
- Sauce:
- 3 tbsp peanut oil
- 2 tsp grated ginger
- 2 garlic cloves, crushed
- 1/4 cup hoisin sauce
- 2 tbsp soy sauce
- 2 tbsp bottled sweet chili pepper dipping sauce
- 1/4 cup honey
- 1/3 cup light brown sugar
- 1/3 cup dry sherry

Preheat oven to 275. Rub the ribs with the five-spice powder and season to taste with salt and pepper. Divide between 2 nonstick roasting pans, cover tightly with foil and cook for 1 hour.

Meanwhile, to make the sauce, heat the oil in a wok over medium-high heat until hot and add the ginger and garlic. Fry for 1 minute, then add the remaining sauce ingredients. Remove the ribs from the oven and mix well with the sauce. Return to the oven and cook, covered, for 30 minutes. Remove the foil and complete cooking for a final 30 minutes. Serve on plates, garnished with the scallions.
