Ingredients
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp sugar
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1 large egg
- 1 1/4 to 1 1/2 cups buttermilk
- 1 tbsp unsalted butter, melted, plus more to coat the skillet
- 1/2 tsp pure vanilla extract
- 1/4 cup mini chocolate chips
- 1/2 cup frozen wild blueberries
- Pure maple syrup or confectioners' sugar, to serve
Directions

In a medium bowl, whisk together the flour, baking powder, sugar, baking soda and salt.

Add the egg, 1 1/4 cups buttermilk, melted butter and vanilla. Stir just until the batter is combined and there are no visible signs of flour.

Fold in the chocolate chips and frozen blueberries. Let the batter rest for 5 minutes.

Meanwhile, melt a pat of butter in a medium or large skillet over medium-low heat. Drop 1/4 cup of batter into the skillet. Cook until the edges begin to dry and little bubbles form on top. Flip and cook 1 to 2 minutes more, until done to your liking. Serve hot with maple syrup or confectioners’ sugar.
