Ingredients
- Buffalo Bites:
- Cooking spray
- 1/2 cup all-purpose flour
- 1/2 tsp garlic powder
- 1/4 tsp sea salt
- 1/2 tsp black pepper
- 1 cauliflower head, trimmed and core discarded, florets cut into bite-size pieces
- 2 tbsp unsalted butter, melted
- 1/4 cup hot sauce
- Dipping sauce:
- 1/4 cup mayo
- 1/4 cup sour cream
- 2 tbsp buttermilk
- 1 tsp lemon juice
- Splash of apple cider vinegar
- Handful of fresh chives, chopped
- Sea salt and black pepper

Preheat the oven to 450. Generously coat an 11×17-inch rimmed baking sheet with cooking spray.

Make the buffalo bites: Combine the flour, garlic powder, salt, pepper and 1/2 cup of water in a large bowl. Add the cauliflower and toss until well coated. Arrange the cauliflower in a single layer in the prepared pan. Bake for 18 minutes, turning halfway through, until golden on both sides.

Meanwhile, whisk together the butter and hot sauce in a small bowl. Pour over the cauliflower, stirring to make sure it’s well coated. Bake for 20 minutes more, turning halfway through, until crispy.

Make the dipping sauce: In a medium, whisk together the mayo, sour cream, buttermilk, lemon juice, and vinegar. Stir in the chives and season with salt and pepper.

Serve the hot cauliflower bites with the dipping sauce.
