Watermelon and Feta Kabobs

Ingredients

  • Wooden skewers
  • 1/4 cup balsamic vinegar
  • 1 small whole seedless watermelon
  • 4 oz. feta, finely crumbled
  • Handful of fresh mint, chopped

Directions

  1. Bring the vinegar to a boil in a small pot over medium-high heat. Cook until reduced to 1 1/2 tbsp, 6-7 minutes.

  2. Cut the watermelon in half and use a melon baller to scoop out the fruit. Place the watermelon balls in a colander or strainer to drain the juice.

  3. Add 4 watermelon balls to each skewer. Arrange the skewers on a serving platter.

  4. Sprinkle the skewers with the feta and mint, drizzle the balsamic over the skewers and serve immediately.
