Ingredients
- 1/4 cup olive oil
- 4 tsp white wine vinegar
- 1/4 tsp kosher salt
- Black pepper
- 1/2 English cucumber, peeled, seeded and cut into 1" matchsticks
- 2 scallions, white and green parts, trimmed and finely chopped
- 2 cups baby arugula
- 12 slices bresaola
Directions

Whisk together the olive oil, vinegar, salt and plenty of pepper in a medium bowl. Add the cucumber, scallions and arugula and toss to coat evenly. Put a pinch of the salad mixture in the middle of each slice of bresaola. Gather up both ends of the bresaola around the salad and secure with a toothpick. Arrange on a small tray and serve.
