Ingredients
- Dressing:
- 1 large garlic clove, smashed and very finely chopped
- 1 small shallot, very finely chopped
- 1 tsp Dijon
- 1 tbsp red wine vinegar
- 1 tsp balsamic vinegar
- 1/2 tsp dried oregano
- Black pepper
- 1/2 tsp kosher salt
- 3 tbsp olive oil
- 1 tbsp lemon olive oil
- 1 tbsp finely chopped basil
- Salad:
- 1 seedless cucumber, peeled, and cut into chunks
- 6 plum tomatoes, seeded and cut into chunks
- 1/2 very small red onion, cut into thin slices lengthwise
- 1 cup crumbled Greek feta

Chill salad plates.

To make the dressing: Whisk together the garlic, shallot, Dijon, red wine vinegar, balsamic vinegar, oregano, salt, pepper and both olive oils until smooth. Stir in the basil.

To make the salad: Combine the cucumber, tomatoes, red onion, and feta in a large, chilled bowl. Add the dressing and toss thoroughly. Arrange on the chilled plates and serve.
