Ingredients
- 4 to 6 shell steaks
- Salt and black pepper
- 5 tbsp olive oil
- 4 garlic cloves, peeled and crushed
- 28 oz. can whole tomatoes
- 4 tsp dried oregano
- Fresh oregano or flat-leaf parsley, for garnish

Season the steaks on both sides with salt and pepper. Heat 3 tbsp of the oil in a large skillet over medium-high heat until hot but not smoking. Sear the steaks on each side, in batches if necessary, until very deep brown, about 3 minutes. Transfer the steaks to a plate and set aside.

Drain the fat from the pan. Add the remaining 2 tbsp olive oil and heat until hot. Add the garlic and saute until golden, about 1 minute. Add the tomatoes, crushing them with your hands, and season with salt and pepper. Cook about 15 minutes, until the sauce thickens. Return the steaks and any accumulated juices to the pan, add the oregano, cover, and cook to the desired doneness (about 4 minutes for medium-rare).

Place each steak on a plate and spoon a bit of sauce on top. Garnish with the herbs and serve warm.
