Roasted Garlic Cauliflower

Ingredients

  • 3 tbsp olive oil
  • 2 tbsp minced garlic
  • 4 to 5 cups cauliflower florets
  • Salt and black pepper
  • 1/3 cup shredded Parmesan
  • Fresh parsley, for garnish

Directions

  1. Preheat oven to 450. Stir together olive oil and garlic in a large bowl; add cauliflower and toss to coat. Transfer to a greased foil-lined baking sheet; season with salt and pepper. Roast, stirring halfway through, until cauliflower is tender, about 25 minutes. Sprinkle with Parmesan. Broil until golden brown, 3 to 5 minutes. Garnish with parsley.
