Ingredients
- 1 1/2 lbs. pork tenderloin, trimmed
- 1 tbsp olive oil
- 1 1/2 tsp Italian seasoning
- 1/4 tsp black pepper
- 1 loaf ciabatta, halved and cut into 6 pieces
- 6 slices provolone
- 1 cup prepared giardiniera

Preheat oven to 400.

Place pork on a baking sheet and rub with oil. Sprinkle with Italian seasoning and pepper.

Roast the pork until cooked through, 25-30 minutes. Let rest for 5 minutes, then slice.

Remove some of the bread from the inside of each piece of ciabatta top. Arrange all the ciabatta pieces on a baking sheet. Divide the pork slices evenly among the sandwich bottoms; top each with a slice of provolone. Bake until the tops are lightly toasted and the cheese has melted, 2-3 minutes. Divide giardiniera among the sandwich bottoms and cover with the tops.
