Ingredients
- 2 chicken breasts
- 1 egg
- 1/2 tsp salt
- 1/2 cup corn flour
- For Breading:
- 1/4 cup cornstarch
- 1/2 cup all-purpose flour
- 1/3 cup water
- 1 small egg
- 1/2 tsp salt and pepper
- 1/2 tbsp garlic powder
- 1 tbsp yellow mustard
- 1/2 tbsp onion powder
- Special sauce:
- 1/2 cup mayo
- 1/4 tbsp onion powder
- 1 tsp yellow mustard
- 1/4 tsp salt
- For assembly:
- 1 cup iceberg, shredded
- 3 burger buns

Make the patty: Add chicken breast, salt, egg in the food processor and pulse it, stopping when it is mixed well and the breast is well-grounded. Then shape the chicken mixture into three patties then coat with cornstarch to avoid sticking. Set aside.

Next, we’ll make the chicken breading or batter. Add all ingredients under the breading in a bowl until lump-free. Dip each chicken patty in the batter then place them on a sheet tray with the wax paper lining. Put in the freezer for an hour to let it set. Meanwhile, make the sauce by combining all ingredients under special sauce in a small bowl then set it aside. Heat oil in a deep pan and heat to 175C. Take the patties out from the freezer then fry about 4 minutes. Put the fried patties on a plate lined with a paper towel and let it rest for 4 more minutes. Fry them once again, this time for about 6 minutes until the color is golden brown. Again, eliminate excess oil by putting them on a plate lined with paper towels.

Prepare the buns. Slice in half then spread with butter. Toast in a pan or griddle until slightly browned. Cook the patties thoroughly.

Assemble the sandwich: Spread buns with the specially prepared sauce, then top with the chicken patty, add lettuce, and cover wit the top part of the bun. Repeat with the other sandwich. Serve warm and enjoy.
