Ingredients
- 4 lbs. chicken breasts cut into strips
- 1 1/2 cup buttermilk
- 1 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1 1/2 tsp salt
- 1/2 tsp ground thyme
- 2 tsp Spanish paprika
- 1/2 tsp dried oregano
- 1/2 tsp dried rosemary
- 1/2 tsp dried sage
- For the seasoning and breading:
- 2 1/4 cups all-purpose flour
- 1 tsp onion powder
- 1 tsp white pepper
- 1 1/2 tsp salt
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper

In a bowl, put the chicken pieces and mix with paprika, pepper, thyme, sage, rosemary, cayenne, salt and buttermilk. Marinate for 5 hours or overnight. While waiting, prepare the seasoned breading. Combine all the ingredients under it. Once done marinating, coat all the chicken pieces with the seasoned breading. Chill while heating up the oil for frying. Heat oil to 180C and deep fry until golden brown in color. Remove excess fat by putting them on a paper towel-lined plate.
