Pumpkin Fruit Cake Bread

I make it into bread… You could Ice it and have as cake… you decide. Recipe DOUBLES EASILY!

Ingredients

  • 3 1/3 c. Flour
  • 2 tsp. Baking Soda
  • 1 1/2 tsp. Salt
  • 1 tsp. Cinnamon
  • 1 tsp fresh Nutmeg
  • 3 c. Sugar
  • 1 c. Vegetable Oil
  • 2 c. Pumpkin
  • 4 Eggs
  • 2/3 c. Pineapple juice ...Use water to make up difference if not enough juice (from crushed pineapple)
  • 1 c. Coconut
  • 1 c. Raisins (golden)
  • 1 c. Maraschino Cherries (Drained/ Coarse chop)
  • 1 c. Crushed Pineapple (Drained well)
  • 1/2 c. Chopped Nuts (your choice) I add 1 CUP

Directions

  1. *350 OVEN.
  2. Grease and flour a Bundt cake Pan (for Cake)
  3. Pan spray individual Loaf pans (for Bread)
  4. Sift together first 6 ingredients into a Large Bowl. Place next 4 ingredients into a medium bowl, and mix until well blended.
  5. Mix the wet ingredients into the dry ingredients, mix thoroughly.
  6. Add remaining ingredients and mix well.
  7. Bake Cake Approx. 1HR. 15 Minutes

  8. Bake Breads 30 Minutes and Check every 10 MIN. thereafter

  9. TO ICE CAKE:

  10. 1/2 c. powdered sugar
  11. 2 tsp. Grated Orange Peel
  12. Enough Orange Juice to make icing smooth…
