Ingredients
- 3 tbsp unsalted butter or olive oil plus 1/2 cup unsalted butter, melted
- 1 large onion, finely chopped
- 1 tsp minced garlic
- 3 tbsp chopped fresh parsley
- 3 tbsp chopped fresh dill
- 1 tsp dried oregano
- 1 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1 lb. ground beef
- 1 egg
- 1/4 cup fine dried bread crumbs
- Salt and black pepper
- 12 sheets filo pastry
Directions

Warm the 3 tbsp butter or oil in a large frying pan or saute pan over medium heat. Add the onion and saute until soft, 8 to 10 minutes. Add the garlic, parsley, dill, oregano, cinnamon, allspice and beef. Cook until the meat is cooked through, breaking up the beef with a wooden spoon and stirring occasionally, about 10 minutes. Transfer to a bowl and let cool slightly. Stir in the egg and bread crumbs and season to taste with salt and pepper. Let cool for 30 minutes or longer.

eheat an oven to 350. Butter a baking sheet. Place 1 filo sheet on a clean, dry surface with a long side facing you. Brush with some of the melted butter. Top with a second sheet, brush with more butter and top with a third sheet. Repeat until 6 sheets in all have been used. Place half the meat mixture in a strip along the long edge nearest you, leaving a 1-inch border. Fold in the ends and, beginning from the long edge nearest you, roll up like a strudel. Repeat with the remaining sheets and meat mixture to make a second roll.

Place the filo rolls on the prepared baking sheet. Brush with the remaining melted butter. Bake until golden, about 40 minutes Cut into slices 1/2 inch thick to serve.
