Ingredients
- 7 oz. beef tenderloin, in one piece
- 2 tbsp lemon juice
- 4 tbsp olive oil
- 2 oz. Parmesan, cut into thin shavings
- 4 tbsp chopped fresh flat-leaf parsley
- Salt and pepper
- lemon slices, to garnish
- Crusty bread, to serve
Directions

Using a very sharp knife, cut the beef tenderloin into wafer-thin slices and arrange on 4 serving plates.

Pour the lemon juice into a small bowl and whisk in the oil. Season with salt and pepper to taste.

Pour the dressing over the beef. Cover the plates with plastic wrap and let marinate for 10 to 15 minutes.

Remove and discard the plastic wrap. Arrange the Parmesan shavings in the center of each serving and sprinkle with the parsley.

Garnish with lemon slices and serve with bread.
