Ingredients
- 3 tbsp olive oil, plus extra for brushing
- 1 lb. tomatoes, peeled and chopped
- 1 red bell pepper, seeded and chopped
- 1 red onion, chopped
- 2 garlic cloves, finely chopped
- 1 tbsp chopped fresh flat-leaf parsley
- 1 tsp dried oregano
- 1 tsp sugar
- 4 sirloin steaks
- Salt and pepper
Directions

Place the oil, tomatoes, red bell pepper, onion, garlic, parsley, oregano and sugar in a saucepan and season with salt and pepper to taste. Bring to a boil, reduce the heat, and simmer for 15 minutes.

Meanwhile, snip any fat around the outsides of the steaks. Season each generously with pepper and brush with oil.

Heat a ridged grill pan until hot.

Add the steak to the pan and cook according to taste: 2 to 2 1/2 minutes per side for rare.

Transfer the steaks to warmed plates and serve with the tomato and garlic sauce.
