Spinach Salad

Ingredients

  • 10 oz. package of spinach
  • 1/2 lb. bacon
  • 1/2 lb. mushrooms
  • Dressing:
  • 2 Tbsp. lemon juice
  • 6 Tbsp. olive oil
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 clove garlic, finely minced
  • 1/8 tsp. dried mustard
  • 1/4 tsp. sugar
  • 1 egg yolk

Directions

  1. Trim and wash spinach. Dry betweeen paper towels. Tear and palce in salad bowl. Render bacon until crispy and drai. Crumble over spinach. Wash, dry mushrooms, slice and then add to salad bowl. Chill.

  2. In a dressing bottle add salt to lemon juice. Shake until dissolved. Add rest and shake. Don’t chill as yolk will congeal. Toss salad before servinig.
