Ingredients
- 2 tbsp olive oil
- 1 large onion, halved and thinly sliced
- 4 bone-in pork chops
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp garlic powder
- 2 cups halved multicolor grape tomatoes
- 3 garlic cloves, minced
- 1 tbsp dried basil or 1/4 cup fresh chopped basil
- 2 1/2 tsp balsamic vinegar
- 4 oz. feta, crumbled
Directions

Heat 1 tbsp oil in a 12-inch skillet over medium-high heat. Add onion; cook, stirring, until golden brown, about 5 minutes. Transfer to a plate.

Heat remaining 1 tbsp oil in skillet. Sprinkle chops with 1/2 tsp salt, 1/4 tsp pepper and the garlic powder; transfer to skillet. Cook 7 minutes per side, or until cooked through. Transfer to a plate and cover loosely with foil. (Do not drain skillet).

Return onion to skillet; stir in tomatoes, garlic and basil. Cook, stirring, until tomatoes are softened, about 1 minute. Stir in balsamic vinegar and remaining 1/4 tsp each salt and pepper, scraping up any browned bits from pan. Serve over chops and sprinkle with feta.
