Sausage Egg Roll in a Bowl

Ingredients

  • 1 lb. ground pork sausage
  • 6 cups coleslaw mix
  • 2 carrots, peeled and shredded
  • 1/4 cup chopped green onion
  • 4 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 2 tbsp chopped peanuts, plus more for garnish
  • 1 tbsp grated fresh ginger
  • 8 oz. pkg. precooked rice, heated
  • Fresh cilantro, for garnish

Directions

  1. Heat a 12-inch skillet over medium-high heat. Add sausage; cook, stirring and breaking up lumps, until browned and crumbly, 5-7 minutes. Drain skillet.

  2. Add coleslaw mix, carrots, green onion, garlic, soy sauce, and sesame oil to skillet. Cook, stirring, until softened, about 5 minutes. Stir in peanuts and ginger. Serve over hot rice and garnish with additional peanuts and cilantro.
