Ingredients
- 1 (4 serving) pkg sugar-free vanilla cook and serve pudding
- 1 (4 serving) pkg sugar free strawberry jello
- 1 cup (8 oz can) crushed pineapple, packed in fruit juice, undrained
- 1 cup water
- 2 cups frozen unsweetened strawberries
- 3/4 cup Cool Whip
- 1/2 cup mini marshmallows

In a large saucepan, combine pudding mix, jello, pineapple and water. Cook over medium heat, stirring often, until mixture thickens and starts to boil. Remove from heat. Stir in frozen strawberries. Place pan on a wire rack and let cool 30 minutes. Whip mixture, using an elective mixer on HIGH, until mixture is fluffy. Stir in Cool Whip and marshmallows. Spoon into serving bowl. Cover and refrigerate at least 10 minutes.
