Ingredients
- 2 lbs. small red potatoes, halved
- 1/4 cup olive oil
- Kosher salt and black pepper
- 1/2 cup small fresh sage leaves
- Flaky salt

ace a baking sheet on the bottom rack of the oven and preheat to 425. Toss the potatoes with 2 tbsp olive oil, 2 tsp kosher salt and black pepper in a large bowl.

Brush the hot pan with the remaining 2 tbsp olive oil and sprinkle with the sage leaves. Add the potatoes cut-side down. Roast until fork-tender, about 20 minutes. Sprinkle with flaky salt.
