Ingredients
- 3 large Haas avocados
- 3 tbsp fresh lime juice
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cumin
- 1/2 tsp kosher salt
- 1 cup coarsely grated sharp Cheddar
- 1/2 medium onion, diced
- 2 Roma tomatoes, seeded and diced
- 1/2 jalapeno, seeded and finely minced
- 2 garlic cloves, minced
- 1/4 cup chopped fresh cilantro
Directions

Halved the avocados and scoop the flesh into a large bowl. Add 1 1/2 tbsp of the lime juice, the cayenne, cumin and salt and mash with a potato masher until chunky. Fold in the cheddar, onion, tomatoes, jalapeno, garlic, cilantro and remaining 1 1/2 tbsp lime juice. Press plastic wrap into the surface of the guacamole and let sit at room temp for 1 hour before serving to let the flavors meld.
