Capon’s Chrissy Burger and Onion Rings

Ingredients

  • For the Special Sauce:
  • 1/3 cup mayo
  • 2 tbsp ketchup
  • 2 tbsp Cholula hot sauce
  • 3 tbsp chopped pickles
  • For the Patties:
  • 1 1/2 lbs. ground chuck
  • 1 1/2 tsp kosher salt
  • 1 1/2 tsp black pepper
  • 8 tsp Dijon
  • For Assembly:
  • 4 burger buns
  • 4 lettuce leaves
  • 4 big beefsteak tomato slices
  • 4 slices American cheese
  • 4 slices bacon, cooked to crisp
  • Onion Rings (see recipe)

Directions

  1. Make the special sauce: In a bowl, stir together the mayo, ketchup, Cholula, and pickles.

  2. Make the patties: In a bowl, using your hands, gently combine the meat with the salt and pepper and gently form the meat into 4 patties. Smear 2 tsp of the Dijon on top of each patty.

  3. Heat a griddle or cast-iron skillet over medium-high heat and when very hot, cook the burgers, mustard-side up, for 3 minutes. Flip the burgers and cook 3 minutes more for medium-rare, 4 minutes for medium (the Dijon side will have developed a delicious caramelized soft of crust).

  4. Assemble the burgers: Lightly toast the buns. Spread a good among of the special sauce on the bottom of each bun, then top with a lettuce leaf and a slice of tomato. Place a cooked burger on each bun, then top with a slice of cheese, a piece of bacon and more sauce. Close burger and serve with onion rings, or jam an onion ring right onto the burger itself.
