Ingredients
- For the Special Sauce:
- 1/3 cup mayo
- 2 tbsp ketchup
- 2 tbsp Cholula hot sauce
- 3 tbsp chopped pickles
- For the Patties:
- 1 1/2 lbs. ground chuck
- 1 1/2 tsp kosher salt
- 1 1/2 tsp black pepper
- 8 tsp Dijon
- For Assembly:
- 4 burger buns
- 4 lettuce leaves
- 4 big beefsteak tomato slices
- 4 slices American cheese
- 4 slices bacon, cooked to crisp
- Onion Rings (see recipe)

Make the special sauce: In a bowl, stir together the mayo, ketchup, Cholula, and pickles.

Make the patties: In a bowl, using your hands, gently combine the meat with the salt and pepper and gently form the meat into 4 patties. Smear 2 tsp of the Dijon on top of each patty.

Heat a griddle or cast-iron skillet over medium-high heat and when very hot, cook the burgers, mustard-side up, for 3 minutes. Flip the burgers and cook 3 minutes more for medium-rare, 4 minutes for medium (the Dijon side will have developed a delicious caramelized soft of crust).

Assemble the burgers: Lightly toast the buns. Spread a good among of the special sauce on the bottom of each bun, then top with a lettuce leaf and a slice of tomato. Place a cooked burger on each bun, then top with a slice of cheese, a piece of bacon and more sauce. Close burger and serve with onion rings, or jam an onion ring right onto the burger itself.
