Ingredients
- 2 tbsp canola oil, divided
- 3 slices fresh pineapple (1/2 inch thick)
- 1 lb. chicken cutlets
- 1 1/2 tsp jerk seasoning blend
- 2 tbsp finely chopped fresh cilantro
- 2 tbsp finely diced red onion
- 1 tsp finely diced jalapeno, seeded
- 1 tsp grated lime zest
- 1 tbsp lime juice
- 1/8 tsp salt
Directions

Heat 1 tbsp oil in a large skillet or grill pan over medium-high heat. Add pineapple and cook, flipping once, until charred on both sides, about 5 minutes. Transfer to a clean cutting board.

Sprinkle chicken with jerk seasoning. Reduce heat to medium and add the remaining 1 tbsp oil to the pan. Add the chicken and cook, flipping once, until cooked through, 4 to 6 minutes. Transfer to the cutting board to rest.

Coarsely chop the pineapple. Combine with cilantro, onion, jalapeno, lime zest, lime juice, and salt in a small bowl. Serve the chicken with the salsa.
