Ingredients
- 1 lb. gnocchi
- 1 tbsp olive oil
- 18 Italian Meatballs (see recipe)
- 1/3 cup pesto
- 1/3 cup ricotta
- 1/3 cup water
- 1/4 cup grated Parmesan
- 3 tbsp breadcrumbs
Directions

Cook gnocchi in olive oil in a large broiler-safe skillet over medium heat until starting to brown, about 5 minutes. Add meatballs and pesto, ricotta and water; stir until well coated. Spread the mixture into an even layer and top with Parmesan and breadcrumbs. Broil on high until golden brown, 1 to 2 minutes.
