Ingredients
- 4 hard-boiled eggs, halved
- 2 heirloom tomatoes, cut into large chunks
- 2 orange bell peppers, cut into large chunks
- 2 lemons, quartered
- 6 ounces good-quality Cheddar, sliced
- 8 slices thick-cut bacon, fried
- 1/4 cup chopped fresh parsley
- 1 cup store-bought dressing
Directions

On a large cutting board or platter, arrange the hard-boiled eggs, tomatoes, bell peppers, lemons and Cheddar. Cut or tear the bacon into bite-size pieces and add it to the board. Sprinkle over the chopped parsley and serve alongside your favorite dressing.
