Ingredients
- 1 1/2 lbs. Yukon Gold potatoes, cut into 1-inch pieces
- 2 tbsp olive oil
- 1 tsp ground coriander
- 1 tsp kosher salt
- Black pepper
- 1/2 cup chopped parsley
- 3 scallions, sliced
- 2 tbsp olive oil
- 2 tbsp champagne vinegar
- Salt and pepper
Directions

Toss potatoes with olive oil, coriander, kosher salt and pepper. Roast on a preheated baking sheet at 450 until browned and tender, 40-45 minutes. Combine parsley, scallions, olive oil and vinegar and salt and pepper to taste; spoon over the potatoes.
