Romesco Sauce

Ingredients

  • 1/2 cup slivered almonds, toasted
  • 1/2 cup breadcrumbs
  • 1/2 cup fire-roasted crushed tomatoes
  • 8 oz. jar roasted sweet red peppers, drained
  • 2 tbsp minced fresh parsley
  • 2 garlic cloves
  • 1 tsp sweet paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup sherry
  • 1/2 cup olive oil

Directions

  1. Pulse the almonds, breadcrumbs, tomatoes, red peppers, parsley, garlic, paprika, salt and pepper in a food processor until finely combined. Add the sherry; process until blended. Continue processing while gradually adding oil in a steady stream.
